Sausage Gravy for Two
Please, whatever you do, don’t buy a packaged mix for this. It’s SO easy to make from scratch!
Make 1/2 a batch of biscuits from this recipe.
Brown up a quarter of a package of mild sausage on medium. Slice off what you need, and freeze the rest.
When the sausage is brown, you can add butter (2 T), but I feel like this is overkill. As long as you have some drippings from the sausage, that should be enough. Turn down the heat to low. The pan will still be quite hot. Add 1/4 cup of flour, and stir to coat the sausage bits. Next, add 1 cup of milk and stir constantly until thickened. Season to taste with a scant 1/2 t of salt, 1/4 t of black pepper, and a pinch of cayenne pepper. If the gravy is too thick, add a little more milk and stir.
If you time it just right, the two components will be done at just the same time. Mr. J likes to break his biscuits up into bite sized pieces so that he can get the perfect gravy coating.
