I made these cupcakes over the weekend. Let’s just say I was dying to bake something after spending all of last weekend with no eggs.
I have a confession. I did something I don’t usually do…I used cake mix and store bought icing. I really don’t like to, but sometimes I cave and go the easy route 😀 What I wanted to share with you today is a little secret I learned at cake decorating class.
The owner/instructor told us that the key to baking (even with a mix) is having room temp or even warm ingredients. You can take a short cut by soaking your eggs in hot water for 10-20 minutes (just a reminder, you can’t microwave in-shell eggs), using hot water, and warming your oil in the microwave.
I’m not sure of the science behind this, but it definitely works. The cake is so moist and airy. Give it a try, and let me know your results!
