Menu for the 4th
As promised, here’s the menu we’ve whipped up for our 4th of July celebration. Mr. J and I aren’t really up to much today, but we’ve enjoyed whipping up some summer favorites for dinner.
BBQ – Early this morning, Mr. J started smoking a Boston Butt. He’s pulling it now, and it tastes divine! BBQ can be really easy to do yourself. I’ve had success making it in the crockpot as well.
Slaw – This morning, I chopped cabbage, carrots, and onions and added a sweet mayo-based dressing based on this one from Bobby Flay. It’s been chilling in the fridge all day to let the flavors come together.
Baked Beans – I started these babies last night with an overnight soak. You start with white navy beans and add tomato paste, garlic, ground mustard, bacon, and a few other things. They taste just like the real thing, only better!
Corn on the Cob – I got a few ears while visiting my parents over the weekend. It’s so sweet, a pure summer delight!
Chocolate Crinkle Cookies – These are so yummy! They taste like cake.
Baked Apples – These were in the plan, but I’m not sure if I’ll get there or not. The sweet tooth kicked in (for the cookies) before I could make them.
So how do you like to eat your BBQ? Chopped or pulled? Hot or mild sauce? With or without slaw?
This may gross out the folks that don’t like their food to touch, but I like to make a BBQ bowl with my bun on the bottom, a layer of beans, a layer of BBQ with sauce, and a layer of slaw on top. It’s a heavenly concoction!
I guess we better start eating. There are only two of us, and there is a TON of food in the kitchen. Maybe you should come over.
