Emergency: Make These Cookies Right Now!

Drop what you’re doing. You NEED these cookies for Thanksgiving! Hello, cranberries…Thanksgiving…these cookies need to happen. Trust.

A little back story…while we’re home for Thanksgiving, we’re having a Sip and See so the people of our hometown can meet our little guy. I’ve been making and freezing cookies and mini muffins for the event this week (which I promise to tell you about later for all of your Christmas baking needs), and I have stumbled upon a WINNER recipe perfect for the season. I was looking for an oatmeal raisin cookie recipe that included instructions to soak the raisins because I heard from a guy at work that it was imperative to do this step. I Googled “best oatmeal raisin cookie ever” and got this recipe.

I was feeling creative so I halved the dough and did half raisins and half Craisins. To the Craisins batch I added white chocolate chips…and the rest, as they say, is history. These cookies are truly amazing. They seem healthy because of the oats and fruit, and I guess you could say they are except for the butter and sugar business. I guess that is from the “cookie” end of the recipe.

To make half and half, soak 1/2 cup of raisins in 1 egg and 1/2 T of vanilla in a small bowl and 1/2 cup of Craisins in 1 egg and 1/2 T of vanilla. You want to make sure that the fruit is mostly covered by the mixture. After an hour or so, I started on the dough. Just before the recipe says to mix in the oats, I separated half of it out into another bowl. Then I mixed in the egg/fruit mixture and half of the oats in both bowls. It worked out great. I will probably just make the Craisin/white chocolate chip ones with the full recipe from now on though. They’re that good!
